Breakfast Casserole

This awesome recipe can be used for breakfast, lunch, or dinner. This recipe does take a while to bake so plan accordingly. Breakfast casserole is great to make because you can add anything you want. I made this one simple but you can add vegetables and any cheese you want to it!

What you will need

1 package of crescent rolls

1 tablespoon of vegetable oil

1 cup of shredded cheese

A splash of milk

1/2 package of Turkey Bacon

5 large eggs

First, preheat your oven to 400 degrees. Cook your turkey bacon as you normally would (I like mine crisp). In a large mixing bowl, mix your eggs,cheese, milk, and meat. In a casserole dish, spread your vegetable oil in the bottom and lay the crescent dough in the bottom and sides of the dish. Pour your mixture on the dough and cover with aluminum foil. Cook the casserole for 20 minutes. Remove aluminum foil and let the casserole cook for another 15 minutes or until cooked thoroughly.

 

Pintos Beans with a Twist

I get tired of the same thing repeatedly but if you are living on a budget, you are probably buying a lot of the same cheap meals. I always buy pinto beans and cornbread when I am low on cash. This recipe will give your pinto beans a little kick and make the same dinner not so repetitive.

What you will need:

1 can Bush’s Pinto Beans

1/2 cup taco sauce

2 cups of cheese

A splash of milk

This is so easy and yummy to make. Now that the weather is cooling down I love to eat pinto beans and cornbread. Technically, I make Johnny Cakes because I like sweet cornbread. Just mix all your ingredients into the pan and heat up and make your cornbread as directed on the box!

Oven Baked Fish

Alright, so this is something that I cook because my boyfriend loves to go fishing and so we always have some fish in the freezer. Of course, you can always go to the store and buy whatever fish you think taste the best.  The key to cooking fish, for me, is how you season it.

I always end up seasoning it different each time. For this fish, I put salt, pepper, and garlic over it. Next, I used Kroger brand poppy seed salad dressing. This is an easy protein you can make for dinner. Add any side that you think would be good with your fish. I love steamed broccoli so I usually use that as a side.

This is a healthy meal that you can easily make. I try to eat healthy meals as much as I can because I am always on the go and find myself eating fast food throughout the week.

Granny’s Fall Cookies

This fun dessert holds a special place in my heart. My grandmother use to make these cookies as soon as the leaves would start to fall. They are quick and easy to make. Be careful though, they can be addicting!

What you will need:

1 package of semi-sweet chocolate chips

30 Ritz crackers

1 jar of peanut butter

wax paper

This recipe will make 15 cookies. If you would like to make more, make sure you pick up an extra pack of semi-sweet chocolate chips. First make 15 peanut butter crackers and place the other crackers on top. Heat your chocolate chips up and place each cracker into the melted chocolate. I use a fork and spoon to make sure each cracker is covered completely. Place the wax paper on a baking sheet and place the cookies on the wax paper. Let the cookies cool for 10 minutes and then place in the fridge overnight.

College Garlic Bread

There has been more than one time that I am stocked up on noodles but have no garlic bread, and no money. I decided to do this one night when I really wanted some garlic bread with pasta. It is yummy and can be done in no time.

What You Will Need

4 slices of bread

2 tablespoons of butter

Salt

Pepper

Garlic

Preheat the oven to 400 degrees. Start by adding as much salt, pepper, and garlic as you like to your butter. Melt the butter in a microwave safe bowl. Spread your butter onto the bread and cook for 10- 15 minutes. It really is that easy! Also, add cheese if you would like before placing in the oven.

 

Spinach Grilled Cheese

I love adding vegetables to my grilled cheese. This recipe is quick and easy. I like to pair this with my   Crock pot Cabbage Soup  recipe. This grilled cheese can also be a snack if you are needing something to hold you over until dinner.

What you will need.

2 slices of bread

shredder or sliced cheese

1 cup of spinach

Butter

First, butter only one side of each slice of bread. Next, add cheese, spinach, and garlic to the other side of one slice of bread. Place the other slice of bread on top with the butter sides facing outward. Place the sandwich in a skillet that is on medium heat for 2 and a half minutes on each side. Enjoy this yummy grilled cheese with soup, ketchup, or by itself!

 

Potato Bake

There is nothing better than potatoes, mashed, fried, or sliced. Today, I wanted to share a recipe that I love to make as a side dish with any protein. It is easy to make and will transport you back home where your mom always made an awesome side dish to go with dinner. This will take a while to cook so plan accordingly.

What you will need

5 red potatoes (makes up to 4 servings)

3 tablespoons of butter

1/2 onion chopped

Garlic, Pepper, and Salt

Preheat your oven to 400 degrees, Cut your potatoes into thin slices. Place half of the potatoes and all the chopped onion into the bottom of the pan. Place the butter evenly over the mixture and add the rest of the potatoes. Cover with aluminum foil and place in the oven for 30 minutes. Remove the bake and stir so the melted butter is spread evenly throughout the mixture. Leave the aluminum off the bake and replace for 30 minutes or until the potatoes are soft. Enjoy!

 

Turkey and Cream Cheese Pinwheels

These pinwheels are great for preparing the night before and taking them with you for lunch the next day. As I have said before, I love cream cheese. I love to whip these up and munch on them the next day. Again, this is a recipe that is quick and easy that you can eat on the go!

What you will need

4 slices of turkey lunch meat

1/2 package of cream cheese

3 slices of sandwich pickles (I use Claussen)

Two soft shell tortillas

Spread half of your cream cheese on one of the tortilla shells. Place your pickle slice on top of the cream cheese (you may have to use 1 and 1/2 pickles) Roll up 2 pieces of turkey lunch meat vertically and place them on top of each other beside your pickle. Roll the tortilla up tightly and cut it up into 6-8 pieces. Repeat with the other half of your ingredients. Enjoy immediately or refrigerate. The pinwheels are will usually stay fresh up to 2 days after making them.

Super Easy French Toast

Here is another super easy and quick breakfast recipe that I like to make before class. It takes 10 minutes tops and taste delicious. I get tired of eating cereal and pop tarts in the morning so I like to switch it up with some French Toast.

What you will need.

2 slices of bread

2 large eggs

1 tablespoon of butter

1 tablespoon of Vanilla Extract

2 tablespoons of Cinnamon

1/4 cup of milk

Bring a skillet to medium to high heat and place your butter in the pan. In a bowl, mix your eggs, vanilla, cinnamon, and milk together. Place the bread in the mixture and make sure you completely soak each side. Place the bread in the skillet and cook for a minute on each side. Enjoy with your favorite syrup or jam!
