Crock pot Cabbage Soup

IMG_0761

As we head into fall, I get so excited to pull my crock-pot out and put it to good use. Cabbage soup is one of my favorites because it is, delicious, healthy, and easy to make. I love this recipe because you can just toss everything into the crock pot and head off to school or work and when you get home, it is ready to eat! Just a reminder that you can always use fresh veggies! It will take a longer to cut everything up so give yourself some time!
What you will need:

1 can sliced carrots

1 can golden sweet corn

1 can great northern beans

1 can diced tomatoes

1 can sliced mushrooms

As much Chicken Broth as you would like(Or vegetarian or beef)

half a head of cabbage (chopped)

1 onion chopped

First, turn your crock pot on low. Next, chop your cabbage and onion and place it at the bottom of the crock pot. Open all your cans and drain all of them (do not drain the tomatoes). Add all ingredients and chicken broth into the crock pot and stir. Cook soup for 5-6 hours on low (2-3 hours on high).
