Breakfast Casserole

This awesome recipe can be used for breakfast, lunch, or dinner. This recipe does take a while to bake so plan accordingly. Breakfast casserole is great to make because you can add anything you want. I made this one simple but you can add vegetables and any cheese you want to it!

What you will need

1 package of crescent rolls

1 tablespoon of vegetable oil

1 cup of shredded cheese

A splash of milk

1/2 package of Turkey Bacon

5 large eggs

First, preheat your oven to 400 degrees. Cook your turkey bacon as you normally would (I like mine crisp). In a large mixing bowl, mix your eggs,cheese, milk, and meat. In a casserole dish, spread your vegetable oil in the bottom and lay the crescent dough in the bottom and sides of the dish. Pour your mixture on the dough and cover with aluminum foil. Cook the casserole for 20 minutes. Remove aluminum foil and let the casserole cook for another 15 minutes or until cooked thoroughly.

 

Oven Baked Fish

Alright, so this is something that I cook because my boyfriend loves to go fishing and so we always have some fish in the freezer. Of course, you can always go to the store and buy whatever fish you think taste the best.  The key to cooking fish, for me, is how you season it.

I always end up seasoning it different each time. For this fish, I put salt, pepper, and garlic over it. Next, I used Kroger brand poppy seed salad dressing. This is an easy protein you can make for dinner. Add any side that you think would be good with your fish. I love steamed broccoli so I usually use that as a side.

This is a healthy meal that you can easily make. I try to eat healthy meals as much as I can because I am always on the go and find myself eating fast food throughout the week.

Cheap Apple Pie

This is sort of something that you can just throw together when you are looking for a quick dessert. Between work and school, I don’t have a lot of time to spend on desserts so I just pick up a few things from the store and throw this together.

What you will need:

1 can of Apple Pie filling (2 cans if you like a lot of filling)

Two pie shells

Preheat your oven to 375 degrees. Place a tablespoon of vegetable oil on your pie pan and spread it around with a paper towel. Place the pie shell down and put your filling inside on top of the pie shell. Place the second pie shell on top and cut 5-6 slits on top. For even cooking, place aluminum foil on top of the pie. Cook for 25 minutes (the pie will need to be cooked longer if you are using two cans of filling).

Bacon Wrapped Pickles

This is an extremely easy snack or appetizer that is great for any occasion! It combines two of my favorite foods, Bacon and Pickles.  I love to make these when people come over and they are always a huge hit.

What you will need.

1 jar of pickle spears (I like to use Claussen)

I pack of sliced bacon

Alright this recipe is super easy so let’s get started. Preheat your oven to 400 degrees. Cover a baking sheet with aluminum foil. Next, wrap each pickle with the bacon and place it on the baking sheet. Place the bacon wrapped pickles in the oven and cook for 10- 15 minutes (cook longer if you like your bacon extra crispy).

 

Italian Zucchini Boats

This low-carb dinner is surprisingly easy and also delicious! I only get off two days a week so I love to make something a little more involved and special for dinner. I hope you enjoy this recipe as much as I do! This recipe feeds two people so adjust according to how much you need. I love to pair these awesome boats with a side of pasta and Alfredo sauce.

Ingredients:

1 cup Ricotta cheese

1/2 cup of Mozzarella cheese

1/2 cup of Parmesan cheese

1 egg

3 large zucchini

1/2 cup vegetable oil

1 pound ground turkey

1 Jar of Marinara Sauce

Alright here we go!

First, put 1 tablespoon of vegetable oil in your skillet. Cook your turkey on medium heat until completely cooked. Season to taste. Preheat the oven to 400 degrees. Next, mix your cheeses and egg in a mixing bowl. Rinse the zucchini and cut each zucchini in half. Take a spoon and scoop out the middle of the zucchini. After you have created your boats, brush the rest of your vegetable oil on both sides of the Zucchini. Place your boats into a cooking dish. Add the marinara to your turkey and stir

After all your ingredients are prepped, spoon your cheese mixture into the boats and spread the cheese evenly. Next, scoop your sauce into the boats and cover the dish with aluminum foil. Cook in the oven for 30 minutes. Remove and sprinkle Parmesan cheese on top and cook for 5 more minutes.

On the Go Egg Sandwich

 

I titled this post as On the Go Egg Sandwich because that is exactly what it is! Are you tired of cereal and pop tarts every morning? Try this recipe out!  I always make this before I head off for class. Remember to make recipes your own! Add any meat or vegetable to this sandwich if you would like.

What you will need:

2 eggs

1/2 cup shredded cheese

1 English Muffin

All you must do to make is tasty sandwich is cook your eggs (I like mine over well). Next, while the eggs are cooking, sprinkle the cheese over the eggs so that it melts. Toast your English Muffin and place your egg on top. It really is that easy and very filling.  I personally like to add salsa to my sandwich because I put salsa on everything. I hope this recipe helped you with your breakfast blues!

Cinnamon Bites

These little dessert bites are awesome for a movie night or when you have people over. One of my favorite ingredients is cream cheese because you can use it in entrees or dessert! 1 pie shell will make 12- 15 of these delicious bites so plan accordingly! Alright, let’s get started!

What you will need:

1 pie shell (for 12 bites)

1 4-ounce pack of cream cheese

1/4 cup of sugar

2 tablespoons of cinnamon

1/2 cup of melted butter

Preheat your oven at 375 degrees. Add sugar and cinnamon together in a small bowl. Lay the pie shell on a baking sheet and cut in twelve pieces. Place a spoon full of cream cheese on each piece and spread evenly over the dough. Roll the dough up and place into the melted butter. Make sure each roll gets completely covered with butter. Next, place the roll in the sugar mix and cover completely in sugar. Place the rolls on a baking sheet that has vegetable oil spread on it.

Cook cinnamon rolls for 20 minutes or until the dough is crispy on the outside. Let the rolls cool for 5 minutes and dig in!
